Sorry for the hiatus

Hello followers! I am so sorry for the hiatus. As soon as spring break ended I was thrown right back into school and work. I barely have time anymore for my original tumblr.

I’ve also been off the scale (literally) for the past few weeks because I’ve been afraid of finding out I gained more weight.

But since March 11, 2012 until today May 4, 2012, my weight is exactly the same! How weird!

I do notice that a lot of the muscle that was developing in March has turned back to flab.

Anyone else having motivational problems and time management issues?

Well to my relief, I haven’t gained anything. Let’s hope next Sunday (the 13th) I will have gone down a little bit more!

“FRIED” CHICKEN AND SWEET POTATO FRIES
INGREDIENTS:
“FRIED” CHICKEN
6 oz chicken breast tenders (raw)
1 egg white
1T water
1 tsp coconut oil, melted
1/3 c Fiber One cereal
Pinch of black pepper, paprika, salt (optional) to taste
SWEET POTATO FRIES
4 oz yam – sliced lengthwise into ¼” thick strips
1 tsp olive oil
1T water
Pinch of salt and/or cinnamon (optional) to taste
HOW TO PREPARE:
FRIED CHICKEN1. Blend fiber cereal & spices in food processor.2. Pour blended mixture into Ziploc bag – set aside.3. Whisk egg whites, oil, and water.4. Dip chicken in egg mixture and then place into the bag.5. Seal bag and shake to coat evenly.6. Place chicken on baking sheet coated with cooking spray and set aside.*
SWEET POTATO FRIES1. Put yams, oil and water in Ziploc bag and shake to coat evenly.2. Arrange flat on baking sheet next to chicken.*
*Bake chicken and fries in oven at 375 for 25-30 min (or until deep golden brown) – turning 1x halfway during cooking.Enjoy…or else!

Riia’s Vegan Sweet & Spicy Chickpeas(Adapted from Damy Health & Kalyn’s Kitchen)
Sweet Chickpeas1 can Organic Chickpeas (drained, rinsed & dried)1 tbsp Coconut Oil (or Olive Oil)2 tbsp Agave Nectar (or Honey)Dash of Salt
Preheat oven to 350 degrees. Line a cookie sheet with parchment paper. Mix all ingredients together in a bowl. Cook in oven at 350 degrees for 25-30 min (or until slightly brown)
Spicy Chickpeas:1 can Organic Chickpeas (drained, rinsed & dried)1 tbsp Olive Oil1 tsp Spice Mix (see Spice Mix recipe below)
Spice Mix:(only 1 tsp of the overall spice mix needed for Spicy Chickpea recipe)2 tsp Cumin1 tsp Ground Criander1/2 tsp Chili Powder1/4 tsp Ground Allspice1/4 tsp Ground Ginger1/8 tsp Gayenne Pepper
Preheat oven to 350 degrees. Line a cookie sheet with parchment paper. Mix all ingredients together in a bowl. Cook in oven at 350 degrees for 25-30 min (or until slightly brown) Enjoy! :)
